You’ll need the following ingredients:
- 1-2 sweet potatoes
- 1 red onion
- 1 pepper
- olive oil
- 1 avocado
- 1 lime
- brown rice (or white rice, quinoa, carrot, etc)
- optional seasonings: cumin, paprika, chili powder
