Is it possible to make decadent desserts that are… good for you? Bring your sweet tooth and join in to find out how! We’ll be making desserts from whole-food ingredients and tasting how great healthy treats can be! The recipes for this class will be dairy and gluten-free, using no refined sugar… but don’t worry, you won’t miss it!
Presenter Colin McCullough will be demonstrating three recipes: Dark Chocolate Raspberry Bites, Lemon Tartlets and Chocolate Mousse Cups. All recipes will be provided after the program.
Dark Chocolate Raspberry Bites
If you’d like, you can make the Dark Chocolate Raspberry Bites along with the presenter. This recipe requires a food processor.
Ingredients needed will be the following:
- ½ cup raw almonds
- ½ cup raw cashews
- ½ cup raw pumpkin seeds
- ½ cup finely shredded coconut
- ⅓ cup raw cacao powder
- ½ cup quick oats
- ⅓ cup cacao nibs (optional)
- 8 medjool dates
- ½ tsp raspberry flavoring
- ¼ tsp espresso powder
- ¼ tsp vanilla
- ⅛ tsp salt
- ½ cup fresh or frozen raspberries
- ½ cup finely shredded coconut for coating
About the Presenter
Colin McCullough has been a vegan for over 20 years, and enjoys teaching people ways to incorporate whole-foods, plant-based meals into their diet. He is the author of The Healthy Vegan Cookbook, published in 2019.
